"Growing up every Christmas morning my mom {who is not the best baker, and or cook} would somehow pull it together in the kitchen to make us all her Monkey Bread. My brother and I would sit there until we felt sick devouring it all and swearing off Monkey Bread until the next Christmas! Anyhow as I got older and more into baking, I find that I am a huge fan of baking with brown sugar and cinnamon, two of my favorites. Before you know it I had meshed together my mom's only baking recipe {basically using her brown sugar topping from the Monkey Bread} and adding that to this delicious cinnamon bread I've created."
Cinnamon Bread with Brown Sugar Icing
The Recipe
Preheat oven to 350
2 Cups all purpose flour
1 Cup White Sugar
2TSP Baking Powder
1/2 TSP Baking Soda
1 TBSP Vanilla
2 TBSP Cinnamon
2 Eggs
1 Cup Buttermilk {you could substitute with milk, but buttermilk works best!}
1/4 Cup Veg Oil
Bake for 45 minutes
Mix ingredients by hand and make sure you do not over mix!
Pour half batter into 1lb loaf pan, then spread a layer of brown sugar and cinnamon mixture (1/2c brown sugar mixed with 2t of cinnamon), adding another layer of batter on top!
Frosting
1 Cup Brown Sugar
1 Stick Butter
1/2 Cup of Walnuts
Melt butter, then add in the brown sugar and walnuts. Fork the top of the bread, and then pour topping over cooled bread!
