Poppyseed Chicken & My Favorite Chocolate Chip Cookies

I have TWO new recipes to share with you today to make up for the fact that I forgot to do New Recipe Tuesday. So it's NRW this time around (New Recipe Wednesday).

First up, PoppySeed Chicken.
Well, kinda. There are two problems. One, I didn't have any poppyseeds. Two, I forgot to take pictures. But here's the recipe anyway. I combined several recipes I found on the Internet based on what I had on hand, so I guess I made up my own version. It tasted good!

PoppySeed Chicken
2 boiled chicken breasts, shredded
1 and a half cans of Cream of Chicken Soup (I guess if you used more chicken, you could use 2 whole cans, I just thought it would be too creamy)
1.5 cups light sour cream (or more if you use more chicken)
Crushed butter crackers
Half a stick of butter, melted.

Boil and shred the chicken. Mix the chicken, soup and sour cream. Top with crushed crackers and then pour the butter over the top. Bake at 375 for 15-20 mins.

Where might you ask are the poppyseeds? Well, I didn't have any. If you do, add 3T of them into the mix!

Next up, my all time favorite Chocolate Chip Cookie Recipe. I've used this recipe for years and it's the only CCC recipe that the cookies plump up and taste great. When I was pregnant with Brayden CCC's were one of few things I seemed to be able to keep down so I worked and worked on this recipe to get it just right. I combined a lot of recipes I found on the Internet and made a lot of changed until I was able to get the cookie to be nice and fat.

Jenna's Favorite CCC Recipe

2 1/4 cup all purpose flour
3/4 fine white sugar
1 unpacked cup dark brown sugar
2 large eggs
1 1/2 t pure vanilla
1 1/4 t salt
1 1/2 t baking soda
1 stick of melted butter, slightly cooled
1 1/2 cups semi sweet chocolate chips

I use my mixer for the whole process. It works great and at the end I only have one thing to clean!

First, things first though. Preheat your oven to 375.

Next, melt your butter in the microwave and set it aside to cool.

In your mixer, combine the sugars and butter. Mix well. Then add the vanilla and eggs. Mix really well. Be sure you don't have any lumps in your batter from the brown sugar. If you do, take and fork and mash them out.

In a small bowl combine the flour, baking soda and salt. Stir it with a whisk or a fork and make sure it is lump free.

Add half of the flour mixture into your mixer:
Mix until just combined. Then add the other half. Lastly, add your chips and mix once more.

Spray 2 baking sheets with Pam. I use a ice cream scooper to make sure all my cookies are the same size and thus, bake evenly.

Bake at 375 for 11 minutes, or until just done. Cool on a rack. Enjoy!
