I covered half of the oreo balls in semi-sweet and half in white chocolate. Word of the wise - I forgot to mention this before but white chocolate, isn't really chocolate and it does a lot better if you heat it over a double boiler with about 1 teaspoon of veg oil. Otherwise it can just ball up in the microwave...speaking from experience here! Ha!
And the new baby I'm talking about is baby S, my friend Julie's baby (that we had the baby shower for about a month ago). He is soooo adorable! He weighs just a few ounces more than B weighed at birth - it was so weird/surreal to hold a newborn the size B was when I couldn't hold him. I'm so happy for Julie and Guy! Julie looked fantastic too!
Remember my couch to 5k thing? Well, I had to go get a second opinion on my knee - because the first opinion seemed really....out there....and was told I have to quit doing couch to 5k. No jogging, certainly no running and limited fast walking. He also advised surgery but for a different condition. I just don't want to do it, so I probably won't!

My friend Amanda just had a sweet baby boy this morning! Too bad she is 3 1/2 hours away and I have to wait to see him.
It was too funny last night when I was reading your blog I was in the middle (the chilling process) of making Oreo balls! I found this stuff at Wal-Mart in the baking isle called Almond Bark-it is quick melting in the microwave chocolate and white chocolate and it worked great! One type even came with a disposable, microwave safe melting tray. Thanks for sharing the recipie!

Love newborns.... and i thought Caseys comment about Almond Bark was so funny. Its a staple over on the west coast and it works really well. You can melt the Chocolate and stir in some almonds. scoop out little spoonfuls and lay on parchment. freeze and then you have Almond bark!
Ok so I am going to make some Oreo balls tomorrow for my Family Christmas on Saturday. Couple questions....I bought milk choc chips...should I use semisweet instead? Also, I planned on melting the chips in the microwave with a little bit of shortening to keep it smooth....will that work for the white choc chips, too? Since I am adding the shortening, you think?

Sorry to hear about your knee. I just ran my first half marathon in November and hurt mine during the race. I finished it, but I have been in severe pain since then. I have been to dr. but they think it is just severe sprain or torn meniscus and I don't want surgery! I am choosing severe sprain!! Hope yours feels better!
The oreo truffles look so yummy! I made those last year and they were delicious. This year I dipped chocolate chip cookie dough balls in chocolate (dark), after experimenting though I figured out it worked better if you freeze the balls for a couple of hours before dipping them. So good!

So I really wish I would have read this post before I started on my strawberry cake balls tonite at midnite!! now 2 hours later and frustrated because of the white chocolate balling up in the microwave~I WISH I had a double boiler.
