Share your healthy recipe here...

I've been experimenting lately with healthy recipes. I actually normally cook pretty healthy but I've been doing some new things.

My latest fave? Turkey burgers. I know, eww. Actually, their pretty good! Here's how I made them last time:

1lb all white meat ground turkey breast
1 T chopped tarragon
1 1/2 T chopped parsley
Salt and pepper
1 T low fat mayo
1/4 cup panko bread crumbs

The mayo keeps the turkey from drying out and the panko keeps the patties from falling apart on the grill!

We eat turkey burgers at least once a week and love them. Only I add a tsp of dijon mustard and a few dashes of worshtershire sauce. They are really good.

Turkey and Spinach Manicotti

8 uncooked manicotti pasta shells

1/2 lb lean (at least 90%) ground turkey

1 medium onion, chopped (1/2 cup)

2 teaspoons finely chopped garlic

1 cup fat-free ricotta cheese

1 teaspoon Italian seasoning

1 box (10 oz) cut spinach, thawed, squeezed to drain

1 1/2 cups pasta sauce (any flavor) or marinara sauce

2 tablespoons finely shredded Parmesan cheese

1. Heat oven to 375°F. Spray bottom and sides of 11x7-inch (2-quart) glass baking dish with cooking spray.

2. Cook pasta shells as directed on box, omitting salt. Rinse with cool water; drain well.

3. Spray 10-inch nonstick skillet with cooking spray. Cook turkey, onion and garlic over medium heat about 5 minutes, stirring frequently, until turkey is no longer pink. Remove from heat. Stir in ricotta cheese, Italian seasoning and spinach.

4. Spoon turkey mixture into shells; arrange in baking dish. Spoon marinara sauce over shells. Bake uncovered 20 to 25 minutes or until hot and bubbly. Sprinkle with Parmesan cheese.

I loooove turkey burgers! My favorite healthy recipe is from Kraft and it's super easy. It is just whole wheat pasta, a can of italian seasoned diced tomatoes, and spinach--cooked and tossed together. Yum!

I love turkey burgers and throw in chopped mushrooms and spinach in to keep them moist!

Here is a recipe for Chicken(or Turkey) Caesar Burgers. We did a similiar recipe from Cooking Light magazine and it was pretty yummy, my husband overcooked them, otherwise I think I would have liked them better.

I can't find my magazine at the moment, but if I do, I will give you that as well.

Another yummy recipe is one we got from Weight Watchers. Cajun chicken wraps. Basically you take some flour and cajun seasoning and coat the chicken breasts(I usally cut them into strips first) with it and then cook it in a skillet sprayed with cooking spray and a bit of olive oil. Then mix some light mayo with some cajun seasoning and spread that on a tortilla shell, add lettuce and the chicken and roll up.

You may not even like Caesar salad or spicy things, but they are both good recipes.

Im glad you posted this! We are starting to eat healthy and change our lives slowly. I just posted a few blogs along these lines so Im glad to see other doin the same thing. :)

One of the things we have been doing lately is grilling salmon. Just squirt some lemon & lime juice, some lemon pepper and grill. Super simple and yummy!
Also grill or roast veggies. We do big pans of cut up veggies drizzled with olive oil & seasoned to taste.
If you need something sweet graham crackers are an endless source & B will love em too! Add flavored cream cheese (cheesecake is my fave but there are tons to pick from), peanut butter, jam, etc.
Also they have this awesome spinach artichoke cream cheese that is great on whole grain or wheat crackers.
